Ooh, what a great question! The first two that come to mind are A is for Activist<https://www.penguinrandomhouse.com/books/231897/a-is-for-activist-by-written-and-illustrated-by-innosanto-nagara/9781609806934/> by Innosanto Nagara and  Maybe Something Beautiful<http://www.theclassroombookshelf.com/2016/09/maybe-something-beautiful/> by F Isabel Campoy, both are picture books available in Spanish and English. If this reader is looking for how-to or non-fiction or for more in-depth these might not be as useful, but they're a pretty great way to start a community organizing conversation!
